Black Forest gateau with “nihonshu” (日本酒)
Recipe of Francesco Boccia
World Pastry Champion
Sumptuous, mouth-watering… simply sensational! A celebration of cream, chocolate and cherries. Known traditionally as Schwarzwälder Kirschtorte, we call it nihonshu black forest gateau. We have imagined the impossible: a fusion between the traditions of Baden-Wüttenberg and Japan, with Nihonshu (日本酒) – saké - taking the place of the kirsch alcohol used in the German recipe, creating a feast of light, aromatic, fresh retronasal aromas (fukumi-ka in Japanese).
