In order to be powerful and memorable, the tasting of a dessert must be accompanied by a story. A meticulous narrative portraying the sensations in the mouth that burns those perceptions of unique flavours and textures into our memory. Making everything memorable. 

Gelecta has created SenSession with this in mind: masterclasses held by World Champion Pastry Chefs designed to refocus the relationship between a dessert and the palate, and provide a unique sensory experience.

Teaming up with Gelecta, the two chefs created the "Sensory Method," which represents the cutting edge of designing pastry creations.
The Sensory Method is the subject of SenSessions, technical and creative pastry sessions where they teach design and perfect technical execution, starting from the definition of palatal perceptions.
In 2023, at the heart of the SenSessions there is Kosmos, Balance of the Universe. An extraordinary dessert by the two world pastry champions Chefs for a wonderful palatal experience.

This is Kosmos, Equilibrium of elements. A dessert with a great meaning and a great ambition, to be an expression of the Equilibrium of The Universe.
Kosmos is gentle freshness for palate. And Like the Universe for the ancient school of Athens, where Socrates was one of the maximum thinkers, Kosmos is made of the 4 elements of the Universe: Air & Fire, Water & Earth. These are the primordial elements of the Universe..
There’s the evanescent lightness of a Mousse, standing for air.
There’s the gentle power of Crispiness of fruit Compote, standing for Fire There’s the watery softness of a Gelatin, standing for Water.
There’s the melty thickness of Cremeux, standing for Earth.
All these 4 elements are combined together in an extraordinary equilibrium.
The AIR of the mousse perfectly fueling the fire of compote. And the Water of Gelatin feeds the Earth of the Cremeux. The result is the equilibrium between textures and flavors that is the engine to light up all your senses.
