A NEW PASTRY WORLD by Francesco Boccia is a work of art in the Think Beyond Collection, a Gelecta Think Tank in association with the World Champions to develop New Concepts in Patisserie in a quest for the perfect balance between creativity, technique and flawless execution.

This work is a strong, positive message for the world of pastry as it sets out to recover from the harm inflicted by the pandemic. A new world conveys an important, inspirational message for the pastry chef who has not given up, and is longing to move forward on a new, different path which is better and even more relevant than in the past.

The work expresses a concept: the dawn of a new world. The old world is shattered, but inside there is another powerful one, full of new energy and positivity. The dessert is back, and now is the Big Opportunity to kick-start a new world that is better, kinder and more beautiful, for both us and our palate.
