SEARCH FOR THE LITTLE MOMENTS OF PLEASURE by Francesco Boccia is a work of art in the Think Beyond Collection, a Gelecta Think Tank in association with the World Champions to develop New Concepts in Patisserie in a quest for the perfect balance between creativity, technique and flawless execution. Offering moments of pleasure is the real essence of desserts. No-one enters a patisserie because they are hungry. They only go in because they are seeking to satisfy an unconscious desire for pleasure, which is just human nature. And in this context the pastry chef takes on a fundamental role: the creator of happiness. This work sets out to underline the importance of this role in the constant human quest for happiness. It is not a question of creating “Eldorados”. All it takes is little moments of pleasure during the day, and those are what the pastry chef creates.
